Ingredients

Serves 4

  • 4 medium tomatoes (cut into quarters)3 Tbsp vegetable (or canola or sunflower oil)2 tsp ginger paste ,2 green chillies,2 tsp coriander powder 1 tsp cumin powder 1 tsp red chili powder (reduce quantity if you want less heat) 1/2 tsp turmeric powder, 50 gm popi seeds, 50 gm melon seeds

    Grind tomato, green chillies, ginger popy seeds,melon seeds together in a food processor (after saute them for 5 mins )until you get a smooth paste. Heat the cooking oil in a medium-sized, heavy-bottomed pan over medium heat. Add cumin seeds,bay leaf and the paste you just prepared. Fry for 5 minutes. Add the powdered spices and fry until the oil begins to separate from the masala. Turn off the heat and allow the paste to cool completely if you're not using it immediately.
