North Indian's Aam Panna/ Bengali aam Poora/ Hyderabadi Aam ka Abshola is one of the most refreshing drink popular drink to beat the heat. Concentrated mixture of Aam Panna and use it as and when required

Raw Mangoes 1 kg
Sugar 1.5 cups
water 2 cups (less as we have to preserve it)
Black salt 2-3 teaspoon or to taste
Mint Leaves 1 bunch
Roasted Cumin Powder 2 -3 teaspoon
Roast mangoes on low to medium flame for 5-7 minutes.
Mangoes can be microwaved too (but for smoky flavor i prefer to roast on gas).
Let the mangoes cool down and Remove peel then squeeze the pulp in a bowl.
Add sugar, salt, black salt according to taste. Blend this mixture in blender.
Refrigerate for sometime. Sprinkle roasted cumin and finely add chopped mint leaves before serving.
To Preserve it add the spices and store it in the fridge in an airtight container.
We just need to use 2-3 teaspoons of this concentrate and add cold water with crushed ice to it, stir and Heat Beating aam Poora is ready to drink.
