Red Chillies 1 kilograms
Whole coriander seeds 100 grams
Fennel seeds or Saunf 100 grams
Spilt Mustard seeds (coarsely crushed ) 100 grams
Raw mango powder/ Amchur powder 50 grams
Turmeric powder 2 teaspoons
Fenugreek seeds or Methi dana 2 teaspoons
Asafoetida or Heeng 1/4th teaspoon
Salt to taste 100 grams
Oil 1/2 litre

Wash Chillies and pat dry completely.. then give slit length wise to allow filling to be stuffed .
Dry roast coriander seeds, Fenugreek seeds and fennel seeds until changes colour and aroma comes, allow them to cool completely and then grind coarsely in mixer jar .
In a mixing bowl take freshly ground powder , turmeric powder, asafoetida powder , raw mango powder and salt.
Mix well all spices, add 2 tablespoons of oil to it and stuffing for red chilli pickle is ready
Now take, pat dried slit red chillies and fill the ready stuffing in to it properly by pressing gently.
Now fill these stuffed red chillies in to glass jar / bottle, keep for two days
Later , heat sufficient oil , let it cool completely and then pour this oil in preserving pickle bottle
Ensure oil should covere all the red chillies
Tasty Tempting Home made Stuffed Red Chilli pickle is ready to serve
