  • 1 cup rice flour

  • 1 tsp cumin seeds

  • 1 tsp papad khar

  • 2 tdp green chilli paste

  • 4 tdp oil

  • 1/2 tsp ajwain

  • 1 tsp salt as per taste

  • 2 cups water

  • 1 doug extruder (sev no sancho)

  • 1plate fitted with holes


  • On a high flame boil water in a heavy bottomed pan.
  • Add all ingredients in water, except rice flour.
  • As water starts to boil add rice flour, lower the flame.
  • Whisk the mixture by wooden spoon till it thicknes.
  • Cook till water is absorbed. No lumps should be formed.
  • Switch off the gas and cover for 2-3 minutes.
  • Put the mixture in a sev gently and pipe out coils on a clean cloth or mat.
  • Dry under the sun light for 2-3 days.
  • Store the dried sev in an airtight container.
  • Fry in hot oil as required and deep fry the sev till slightly change colour.
  • Remove drain and put them on a absorbent paper.
  • Cool and store in an airtight container.
