Season has arrived with the Hariyali of Raw Mangoes and only the sight of it, is enough to make mouth water ..I am from MP and Kacche aam ki launji is like staple food during summers there. Before preparing Mango pickle which lasts for the whole year,making Launji is like welcoming summer and mangoes..becomes mandatory to prepare it have it immediately with Puri,Paratha or even with Chapati
Heat oil in a pan and prepare tadka by adding Rai,Jeera,Methi dana, Haldi Pdr,Red Chilly Pdr and Heeng
Add Raw mango salt ..mix well and cook covered till half done
Add Gud/ jaggery and cook without lid till it melts
Mix well and Yummy Tangy Launji is ready .
Let it cool completely naturally and store in glass jar,it stays preserved for more than 6 months
Tastes Best with Puri, Paratha or Steamed Rice ..
