Heat oil on high flame
Add chopped garlic and ginger
Fry till it golden brown
Add chopped tomatoes and whole masala
Stir well, don't add water
Cook all together for a minute
Add chopped methi and diced potato
Mix well in tadka
Cover with lid and shift on small gas
Keep on low flame
Cook for 10 minutes
Open lid and stir well
Cover and cook for another 10 minutes
Open lid if there is water then cook it without lid for another 5-7 minutes
Careful not to burn the vegetable
Aloo-Mathi sabji is ready
Serve hot with chapati
