Ingredients
Serves 4
Green Brinjal - 1 Kg sliced into long pieces
Tomato's - 2 Big chopped
Onion - 1 Big sliced
Garlic - 5-6cloves
Ginger - 1"tukra grated
Turmeric Powder - 1/2 teaspoon
Coriander Powder - 1 teaspoon
Garam masala powder - 1/4 teaspoon
Masala -Ae-Magic - 1 pouch
Kitchen king powder - 1/4 teaspoon
Red chili Powder - 1 teaspoon or as per the taste
Cumin seeds - 1/2 teaspoon
Carom seeds - 3/4 teaspoon
Bay leaves 1(optional)
Dessicated Coconut 1/2 tablespoon
Salt to taste 1/2 teaspoon
Refined oil 3-4 tablespoon
Coriander leaves for garnishing 1 tablespoon finely chopped
Directions
Heat oil in a pan.
Add cumin (jeera) along with carom (ajwain) seeds
Once the seeds starts spluttering add sliced onion,make it brown and then add chopped tomatoes to it....
Cook on sim flame for 3-4minutes
Now add brinjal, turmeric powder,red chilli powder, coriander powder,masala-ae-magic and kitchen king powder along salt. Stir well.
Cover the lid and cook for two to three minutes on high flame. Stirring in between.
Now add crushed ginger & garlic (note - do not put this in starting).
Let the raw smell of masala goes off.
Cook the brinjal until it gets tender and the oil starts to float on the surface. This usually takes 8-10 minutes.
Add coconut powder along with garam masala powder this time & cook for another few minutes.
Take the pan off the fire and serve this sabzi hot, garnished with coriander leaves.
