"Eggless Egg Curry"- It's a vegetarian delight, unique & different, soft tender eggless potato paneer eggs, fairly easy to do a fusion, food lovers will love this magical recipe of mine....!

Ingredients

Serves 5

  • Oil 1 Karachi for dish & for deep frying as needed

  • Water 1/2cup

  • Potatoes 3-4 medium sized

  • Paneer 250gm (125gm for Egg yolk mixture and 125gm for white potato mixture)

  • Maida 1-2teaspoon

  • Cornflour 1 teaspoon

  • Tomato puree 3/4cup

  • Salt to taste 1/4 teaspoon minimum

  • Red chillie 1/2teaspoon

  • Tumeric powder 1/4teaspoon for dish & 1/4 teaspoon to be mixed with crumbled paneer for Egg yolk

  • Garam masala 1/2teaspoon

  • Black pepper powder 1/4teaspoon

  • Coriander powder 1/2teaspoon

  • Cumin seeds 1/2teaspoon

  • Green chillies chopped 1-2

  • Coriander leaves chopped for garnishing 1 tablespoon

  • Onion paste (3-4 onions pureed in a mixer grinder)

  • Saunf 1/2teaspoon

Directions

  • 01

    Heat 2 tablespoon oil in a kadhai

  • 02

    Add 1/2 cup Onion paste, fry till light pink

  • 03

    Mix 1/2 teaspoon Cumin seeds with the dry masala

  • 04

    Add this to the kadhai, mix it nicely

  • 05

    When oil starts leaving the sides, add 3/4 cup Tomato puree

  • 06

    Mix 1/2 teaspoon fennel seeds & salt to taste

  • 07

    Add this to the masala with 1/2 cup water

  • 08

    Add 1/4 cup Coriander leaves & 1-2 green chillies, Cook for 1-2 minutes, take off heat

    Grate 3-4 boiled Potatoes

  • 10

    Add 50gms crumbled cottage cheese, mix

  • 11

    Add 1 teaspoon Cornflour, 2 teaspoon flour, & salt, make a soft dough

  • 12

    Make a yellow dough with 150gms cottage cheese, 1/4 teaspoon turmeric, salt

  • 13

    Shape both dough's into balls

  • 14

    Stuff a yellow ball into a white ball

  • 15

    Shape all eggs, roll in flour, rest for 5-10 minutes

    They are ready to fry

    Put into hot oil

  • 18

    Fry till golden brown & crisp

    Cut from the centre

    Take out in a serving dish, put ready curry on top

    Serve hot with naan, roti, parents anything of your choice

    Additional tip:- can add 1tablespoon of Amul Fresh Cream at the time of serving
