Tricoloured Mix Veg Pulao is a dish that is loaded with veggies and a horde of spices which give it a memorable exotic flavour.

  • Rice- 1 cup long grain basmati cup chopped carrot

  • 1 cup green peas boiled ,Tip- can add 2 pinches sugar while boiling , it helps in retaining green colour of peas

  • Onion -1cut into thin slices

  • Cumin seed-1/4 teaspoon

  • Dalchini stick 1 inch or one fourth teaspoon powder

  • 1/2 teaspoon garam masala

  • Ghee-1tbsp

  • 2 tej patta ,

  • 2 badi kali elaichi,

  • 2 kali mirch sabut ,

  • 2 laung

  • whole red chilli-2

  • 1 tablespoon Coriander leaves chopped for garnish

  • 2 tablespoons grated carrot for the garnish


  • Wash rice and drain the water and keep aside,soaked
  • Heat ghee in pressure cooker add dry chilly, cumin seed, tejpatta, elaichi,kalimirch, dalchini stick, sauté for few seconds.
  • Add onions and cook till turn little golden brown.
  • Add , carrot salt and mix it well.
  • Now add washed rice and cook for 1-2 minutes.
  • Add total 2cups of water,including the water used in soaking. Once its start boiling give a nice Stir otherwise veggie and rice will stuck in the bottom.
  • Close the lid of the pressure cooker and cook till one whistle comes.
  • Turn off the heat. Let the pressure release by itself.
  • Add boiled peas and simmer for 1 or 2 minutes.
  • Mix well, to retain the green colour of peas.
  • Garnish with coriander leaves and grated carrot.
  • Serve hot with mix veg raita.
