Ingredients

Serves : 5
  • 1. FOR DOUGH


  • 3 cup maida


  • 1/2 cup carrot purée


  • 1/2 cup spinach purée


  • 1 tsp salt or to taste


  • 250 ml oil for deep fry


  • 1/2 tsp Turmeric powder


  • 3 tsp oil


  • 2. FOR STUFFING


  • 1 cup grated paneer


  • 1/2 cup finely chopped capsicum


  • 1/4 cup grated carrot


  • 1/4 cup crushed Sweet corn


  • 2 spoon mawa


  • 1 tsp Ginger green chilli paste


  • 1/2 tsp coriander powder


  • 1/2 tsp cumin powder


  • 1/2 tsp dry mango powder


  • 1/4 tsp garam masala


  • 1 tsp kasturi methi


  • 1/2 tsp red chilli powder


  • 1 tbsp chopped coriander leaves


  • 1/2 tsp cumin seeds


  • 1 spoon oil, salt to taste

Directions

  • FOR DOUGH :- Take a mixing bowl add 1 cup maida and oil Salt mix well then add carrot purée and knead the tight dough. Keep aside,
  • Next take another 1 cup of maida then add salt and oil mix well after add spinach purée knead the tight dough. Keep aside. (If u need water add)
  • Further take leftover 1 cup of maida and add salt, turmeric powder, and oil mix it well. Then add required water to make tight dough. Keep aside all dough's to rest for 10 mins.
  • For stuffing :- Heat the oil in pan add cumin seeds and allow it to splutter. Now add finely chopped capsicum and fry them for 2-3 mins.
  • Next add ginger chilli paste. Fry till raw smell disappear from Ginger. After add grated carrot, crushed Sweet corn, and all masala spic mix well.
  • After add grated paneer, and mawa mix it well. Lastly add chopped coriander leaves saute well for a minute. Now stuffing is ready.
  • FOR CHANDRAKALA Take all the dough's and make a balls and roll it like small puri.next take one orange colour puri and grease the water then put on another yellow colour puri. Then grease the water on puri. After put the green colour puri. Gently press the edges of all sides. Further roll it like chapati with the help of rolling pin.
  • Next roll this large coloured chapati in cylindrical shape.now take a sharp knife and cut into small pieces. Just roll it small puri.
  • After fill the stuffing mixture.and apply water to edges around then place the another small puri. Lightly press and make a spiral as shown in the picture. Repeat this process to all CHANDRAKALA.
  • Lastly heat the oil in pan. Once oil is heat sufficiently. Fry all chandrakala in low to medium flame until they turns crispy.. Finally paneer stuff chandrakala is ready to serve.
  • Serve with red or green chutney, or Tomato sauce....
  • My tip :- additionally you can use your choice stuffing. I made 2 typesof stuffing one is paneer and another one is dry fruits stuffing.
