2 medium tomatoes pureed for the orange colour
2 tablespoons mint coriander chutney for the green colour
1 medium onion finely chopped
1 green chilli finely chopped
1 carrot small grated
1/4th cup French beans chopped
1 small capsicum finely chopped
1 tablespoon coriander leaves (finely chopped)
1 sachet eno fruit salt
1 teaspoon salt or to taste
1 teaspoon oil for greasing the appe pan
1 cup water or as required to make batter
For the garnish - 1 tablespoon grated paneer
1 tablespoon grated cheese
1 tablespoon grated carrot
4-5 slices of capsicum
8-10 cloves for the wheel in the centre
Take suji and rice flour in a bowl, add onion, green chillies , grated carrot, french beans, coriander, curd and salt.
Add water gradually to make a lump free batter.
Batter should neither be too thick or too runny but it is more towards thicker side .
Cover and keep the batter aside for 10-15 minutes.
Again mix the batter properly, If you feel the batter has thickened then add little water.
Divide the batter into 3 parts, add the tomato purée to one part of the mixture
To second part add the mint coriander chutney and the third part remains white.
Now mix eno fruit salt in all the 3 batters, just before making appe
The batters will fluff slightly and fluffed batter is ready to make appe.
Heat the appe pan on high flame when the mould becomes hot properly then simmer the flame and grease the mould with the oil.
Fill the respective batters in the cavities
Cover the appe pan with a lid and cook it on low flame for 1-2 mins or only till the batter fluffs .
Then flip appe with the help of wooden spoon so that they will be cooked from the other side also.
Cook for 1-2 minutes on low flame, until the appe are cooked from all the sides.
Remove them on a plate and do the plating as per the choice.
Spread grated cheese and paneer on the white appe, and arrange the cloves in a circle to depict the wheel.
The appe are ready to eat, serve them hot with tomato sauce or any type of chutney or even Sambhar.
I have used the iron made appe maker to fry appe if you are using non stick appe maker then the way of frying appe in that may differ slightly.
