Ingredients

Serves : 4
  • Full fat milk -1 1/2 ltr.


  • Sugar- 1cup or according to taste


  • Fresh cream or malai- 1cup


  • Saffron- 1/4teaspoon sock in milk


  • Orange candy-1tablespoons crushed


  • Orange syrup- 1tablespoons


  • Pistachios- 1tablespoons crushed


  • Khus syrup- 1tablespoons


  • Cardamom powder- 1/4teaspoon

Directions

  • First heat milk in a wide and heavy bottom vessel.
  • When milk start to boil let the flame simmer
  • Now add cardamom powder and sugar and cook on slow flame till milk reduced to half.
  • Now add cream and socked saffron and stir it continue so that it doesn't stick to the bottom of pan.
  • Cook on slow flame till milk reduced to 1/4th of its original quantity.
  • Once the milk reduced to 1/4th that means kulfi rabdi is ready
  • Now switch off the flame and cool it completely
  • Now divide the kulfi in to three equal parts
  • Add crushed Orange Candy and Orange syrup in one part
  • Now add khus syrup and crushed pistachios in second part
  • Third part is white itself
  • Now pour the all three kulfi mixture into kulfi mould and keep them into refrigerator for overnight.
