Ingredients

Serves : 2
  • 1 cup Basmati rice


  • 2 onions, finely chopped


  • 1/2 cup Hara choliya,(fresh green gram)


  • 2 tbsp ginger garlic paste


  • 3 tbsp oil or ghee


  • 1 tbsp cumin seeds


  • 2 pepper corns


  • 1 bay leaf


  • 1/4 cup mint leaves, chopped


  • 1/4 cup fenugreek leaves, chopped


  • 2 tsp salt


  • 1/4/cup boiled tomatoes chopped


  • 1 tsp Kashmiri red chili powder


  • 2 tbsp coriander powder


  • 2 tbsp garam masala


  • 1 tsp chole masala


  • 1 tsp pav bhaji masala


  • 1/4 cup yoghurt


  • 1 small carrot, chopped


  • 1/4 cup capsicum chopped

Directions

  • Firstly, wash rice and parboil it. That means it should be 70% cooked. Once the rice is cooked strain it and keep it aside.
  • Now we will prepare green pulao- heat oil in a kadhayi add 1/2 tbsp cumin, all the whole spices, onions and sautee it till onions are cooked.
  • Now add green choliya, capsicum, mint, and ginger garlic paste and saute it for another 2 minutes
  • Add 1 tbsp coriander powder, 1/2 tsp red chili powder, chole masala and 1 tbsp garam masala and yoghurt. Mix everything well .
  • Add little water say about half a cup and allow green choliya to cook.
  • Once the green choliya is cooked add salt and 1/2 cup cooked rice.
  • Mix it well and cover it with and allow it to cook for 5-6 minutes on a low flame.
  • Now to prepare tomato carrot rice heat oil in another pan add remaining cumin, chopped carrot and tomatoes. Saute everything for 2 minutes.
  • Now add Kashmiri red chilli powder, pav bhaji masala and garam masala and mix it. Add little water so that masalas don't get burned.
  • Now add salt and 1/2 cup of cooked rice. Give it a nice mix and cover it and allow it to cook on low flame for 4-5 minutes.
  • After 4 minutes remove it from flame .
  • Now for the presentation. In a transparent bowl or glass or serving dish place some tomato carrot rice at the bottom.
  • Then add some plain white rice over it.
  • Then for the green colour. Add the green choliya and mint pulao on top.
  • Drizzle some ghee over it and serve it. This pulao do not contain any food colour. All the colour we got is from the vegetables. It tastes amazing.
