Mango Thokku / South Indian Mango Pickle

Ingredients

Serves 15

  • Raw Mango – 2 large approx 700-800 gms

  • Salt - 2-3 tbsp or to taste

  • Red Chilly Powder – 3 tbsp

  • Asafodita - 1 tsp

  • Mustard seeds – 1 tsp

  • Fenugreek seeds – 1 tsp dry roasted and coarsely grounded

  • Mustard Oil – 1 cup

Directions

    Peel the mangoes and finely grate them.

  • 02

    Heat oil in a pan and add Asafodita and mustard seeds and let it splutter.

  • 03

    Add grated mangoes and stir well. Cook on medium heat for about 10 mins stirring frequently to prevent from burning and sticky to the pan.

    Add salt, chilly powder, stir well and cook for about 5-10 mins.

    The oil will start floating on the top at this point add the grpunded fenugreek seeds, give a quick stir and take off the heat.

    Let it cool down completely and store in a sterilized airtight jar.
