White Vinegar - 3-4 tbsp
Beet root - 3-4 small slices
Salt - 1 tbsp or to taste

Water - 1- ½ cup approx
Take the shallots and peel them. Wash them and pa
Take a sauce pan, add water, salt, beet root, sugar and bring to boil. Boil till the salt sugar dissolves which will take only few mins. Let it stand for a min or two.
Add the vinegar and shallots. Let it cool down completely. Now tansfer it along with water to a clean sterilized jar, add the beet root slices on top or you can discard it if you wish.
Cover and store in refrigerator. Can be served after 24 hrs.
This can go for 3-4 weeks refrigerated. Always use a clean spoon everytime you serve.
