Ingredients

Serves : 4
  • 300 grams Paneer (cottage cheese)


  • 1 tomato sliced vertically.


  • 1 onion sliced vertically


  • 1 Green capsicum cut into 1 inch pieces


  • 2 teaspoons oil


  • 2 teaspoons Chaat masala


  • 1/2 teaspoon roasted sesame seeds


  • For marinade - 1 cup Hung curd


  • 2 teaspoon Ginger-garlic Garlic paste


  • 1 teaspoon Garam masala powder


  • 2 tablespoons fresh cream


  • 1 teaspoon Lemon juice 1 teaspoon


  • 1 teaspoon Salt or to taste


  • 1/2 black pepper powder or to taste.


  • For the orange tikka- 1/2 teaspoon Kashmiri red chilli powder


  • 2 tablespoons carrot purée


  • For the green tikka - 2 teaspoon green chutney

Directions

  • Cut paneer into one and a half inch squares with half inch thickness.
  • De-seed the capsicums and tomato.
  • Mix together all the ingredients of the marinade in a bowl.
  • Now divide the curd mixture into 3 parts
  • Mix carrot purée and red chilli powder in one part
  • Mix green chutney in second part of curd mixture
  • Now marinate 1/3 of the total paneer cubes and capsicum in green curd mixture
  • Similarly, Marinate paneer cubes and tomatoes in orange curd mixture.
  • And Marinate rest of the paneer cubes and onions in white curd mixture
  • Let them sit covered for about half an hour.
  • Heat 1 teaspoon oil on a non stick griddle and place the paneer cubes and vegetables and shallow fry on medium flame till golden and crisp on all sides.
  • Take them out in a plate.
  • For the plating
  • Place a capsicum piece and green paneer cubes in a skewer at the bottom, then
  • onion pieces and white paneer cubes and lastly tomatoes and orange paneer cubes.
  • Sprinkle chaat masala and roasted sesame seeds, garnish with a coriander sprig and serve hot.
