Ingredients

Serves : 3
  • For dough: Sooji 1/2 cup


  • Maida 1 cup


  • Corn flour 1 tbsp


  • Salt 1 tsp


  • Baking soda 1 pinch


  • Oil 2 tbsp


  • For filling: Potato 3 boiled and chopped


  • Sprouted moong 1/2 cup


  • Dal pakora 10


  • Curd 400 gram


  • Rosted zeera powder 1 tsp


  • Black pepper 1 tsp


  • Red chili powder 1 tsp


  • Black salt 1 tsp


  • Sweet chutney 1/2 cup


  • Green Chutney 1/2 cup


  • Sev bhujia 1/2 cup


  • Pomegranate pearl 1/2 cup


  • Boondi 1/2 cup


  • Coriender leaves chopped 1/2 cup


  • Sugar 2 tsp to be mixed with Dahi


  • For red chutney: Tamarind dried 100 gram


  • Sugar/ Gur 100 gram


  • Salt 1/2 tsp


  • Roasted cumin powder 1 tsp


  • Red chili powder 1/2 tsp


  • For green chutney: Coriander leaves 1 bunch


  • Lemon juice 1 tsp


  • Green chili 1


  • Garlic cloves 5

Directions

  • Method for tamarind chutney: Boil tamarind with water, sugar, salt, chili powder for about half an hour.
  • Let it cool and sieve.
  • Add roasted jeera powder. Its ready.
  • For Kachori: In a mixing bowl take semolina, refined flour. To this add salt, baking soda and 2 tbsp oil.
  • Now add water to make a tight dough. Keep aside 15 minutes.
  • Heat enough oil in a pan to make the kachoris.
  • After 15 minutes knead the dough again.
  • Take out small balls, roll them wirh rolling pin and fry them to puff them up.
  • Let them cool before stuffing.
  • Break the center of the kachori.
  • Fill with the fillings.
  • Top with some roasted cumin powder, red and green chutney, coriander leaves, curd and pomegranate.
  • Scrumptious and delectable Raj Kachori is ready. Enjoy endlessly.
