Ingredients

Serves : 6
  • For Guava Rabdi:- 1 Guava Big (Take ripe Guava)


  • Sugar 1/2 katori


  • Bread crumbs 1 katori


  • Reliance Full Cream Milk 2 packets (1ltr)


  • Cardamom pods 2-3


  • Cornflour 1tablespoon mixed in 1/2 cup of milk


  • Chopped Almonds for garnishing 2-3tablespoons


  • For Boondi :- besan 3/4 cup


  • Water as required to make a smooth batter 1/2 cup approximately


  • Baking powder/Baking soda 1/4 teaspoon


  • Oil for deep frying 1 packet


  • Sugar Water Chashni equal quantity 3/4 cup each


  • For kheer:- Boil milk 1kg


  • Sugar according to taste 1/4 cup will be enough, because rabdi and boondi is also there


  • Left over boiled white Rice 1 katori

Directions

  • Place milk in wok/patila (use aluminium only) on fire
  • Bring to boil
  • Add sugar, mix well
  • Add fresh white bread crumbs
  • Now keep on sim flame till the milk is reduced to half, at this time add cardamom pods (no need to ground put directly)
  • Use cornflour at this time
  • Mix cornflour in 1/2 cup of milk
  • Put this cup milk in the reduced milk
  • On the other side take cooker, place on fire, add chopped guava to it
  • Add water 1/2 cup
  • Close the lid and give 1-2 whistles
  • Now when the steam is out, open the lid and check the guava, it will be soft
  • Put soft guava in mixi
  • Close the lid of mixi and churn well
  • Now strain and sieve
  • This way the seeds will not get mixed
  • Now finally put this guava sieved puree mixture in the reduced and cooled milk (do not add this puree in hot milk otherwise the milk will destroy and paneer will come out, so please be careful
  • Mix well and serve garnished with chopped almonds
  • Now for boondi...take a bowl add baking powder or baking soda any one
  • Add water to it
  • Add besan
  • Mix well
  • Now heat oil
  • put batter in small batches
  • This way
  • Take out in a plate
  • On the other side make ek taar ki chashni
  • Stir well,dip and take it out
  • Keep aside
  • Now for kheer....take aluminium wok, boil milk
  • Add boiled rice
  • Add sugar
  • Keep on slow fire
  • Keep stirring,till it is reduced to half
  • Take out in a serving bowl
  • Now arrange it nicely, Guava Boondi Dessert is ready to serve.... Firstly put light green coloured Gauva Rabdi,then put Rice Kheer for the second layer and then top it with boondi,so that a nice tri-colour may appear........
