Ingredients

Serves : 4
  • 3 cups of cooked rice 1 tsp cumin seeds 3/4 tsp salt


  • For white layer 2 tsp oil 1/2 cup onions cut in slices


  • 1/2 cup small paneer pieces


  • For orange layer 2 tsp oil


  • 1 tbsp ginger garlic crushed


  • 3/4 cup tomato puree


  • 1 tsp kashmiri red chilly powder


  • For green layer 2 tsp oil


  • 1 tbsp garlic, ginger, gteen chilly crushed


  • 1 cup spinach puree


  • 1/2 tsp garam masala


  • 2 tsp lemon juice

Directions

  • To prepate the white layer. Heat oil in a wok.
  • Add the 1/2 tsp cumin seeds, once it starts cracklling add the onions in it and saute for a while.
  • Add the paneer pieces and stir for a while make sure it does not change its colour.
  • Add the cooked rice alongwith salt(according to taste) and toss slightly.
  • The white layer of rice is ready.
  • For orange layer. In the wok add oil and 1/2 tsp cumin seeds, once it startvspluttering add ginger garlic to it and saute for a while.
  • Add the tomato puree, salt, red chilli powder and let it cook for 2 minutes.
  • Take a bowl and cover it with a cling film. Brush some oil over it and trabsfer the orange layer of rice into it. Flatten the rice with spatula and make an even layer.
  • For green layer. Heat oil in a wok add ginger, garlic, green chilli crushed and saute for a while.
  • Add spinach puree and cook for a while.
  • Add salt, garam masala and lemon juice and mix well.
  • Add the cooked rice and toss it slightly.
  • To assemble. In the container which contains the orange layer of rice add the white layer of rice and flatten it to form an even layer.
  • Then add the green coloured rice and even it out using a spatula.
  • Then turn the container upside down on a plate.
  • The delucious Tiranga Pulav is ready.
