Heat oil until hot.
Crush garlic in mortar pestle.
Add it into the oil and on low flame cook till it turns golden. Dont cook much as it will make the garlic hard and if it burns it will taste bitter.
Add chillies and saute.
Add salt, cumin powder, red chilli powder and mix well.
Sprinkle some water n saute for 1 min.
Switch of the gas and add vinegar or lemon juice. Mix well and store it. It remains good for 10 to 15 days.
