Ingredients
Serves 8
1 pound ground beef
1 medium red bell pepper, chopped
1 cup water
1 can (12 ounces) water chestnuts, chopped
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons soy sauce
2 tablespoons seasoned rice vinegar
2 tablespoons chopped fresh cilantro
1 or 2 heads leaf lettuce, separated into leaves (discard outer leaves)
1 cup Hoisin sauce (optional)
Directions
1. Brown beef in large skillet over medium-high heat 6 to 8 minutes, stirring to break up meat. Drain fat. Remove to the crockpot/slow cooker. Add bell pepper, water, water chestnuts, onion, garlic, soy sauce, and vinegar. Cover; cook on HIGH 3 hours or until vegetables are tender. Turn off heat. Stir in cilantro.
2. Spoon beef mixture onto lettuce leaves; sprinkle with hoisin sauce, if desired. Wrap lettuce leaves around beef mixture to make wraps.
