Ingredients

Serves : 8
  • 1 pound ground beef


  • 1 medium red bell pepper, chopped


  • 1 cup water


  • 1 can (12 ounces) water chestnuts, chopped


  • 1 small onion, chopped


  • 2 cloves garlic, minced


  • 2 tablespoons soy sauce


  • 2 tablespoons seasoned rice vinegar


  • 2 tablespoons chopped fresh cilantro


  • 1 or 2 heads leaf lettuce, separated into leaves (discard outer leaves)


  • 1 cup Hoisin sauce (optional)

Directions

  • 1. Brown beef in large skillet over medium-high heat 6 to 8 minutes, stirring to break up meat. Drain fat. Remove to the crockpot/slow cooker. Add bell pepper, water, water chestnuts, onion, garlic, soy sauce, and vinegar. Cover; cook on HIGH 3 hours or until vegetables are tender. Turn off heat. Stir in cilantro.
  • 2. Spoon beef mixture onto lettuce leaves; sprinkle with hoisin sauce, if desired. Wrap lettuce leaves around beef mixture to make wraps.
