  • 1 kg carrot

  • 1/2 kg cauliflower

  • 2 reddish

  • 1.5 tsp chili powder

  • 1 tsp turmeric powder

  • 2.5 tsp mustard powder (small mustard)

  • 4 tsp mustard oil

  • 2.5 tsp salt


  • Peel the carrots n reddish and wash them, then cut into long, thin slices.
  • Now wash the Cauliflower and cut into small pieces.
  • Over cotton cloth/newspaper spread all the pieces of vegetables n let them dry for 5 to 6 hours/overnight.
  • Once all the vegetable pieces are dried, mix all the spices together.
  • Transfer all the vegetables to a jar, sprinkle all the mixed spices and mustard oil, shake the jar so that all the pieces are well coated with spices. ( at this point of time we can taste the pickle and add the spice - whichever is less according to our taste. )
  • We have to wait for 15 to 24 hours to get the pickle ready and we can also keep it in the sunlight so that its get ready faster.
  • Once it is ready, we can also keep in the refrigerator so that we can use it for a month or two.
  • Delicious, Sour carrot pickle is ready to be relished with Chapati or any other stuffed paratha.
