  • 1 kg carrot

  • 1/2 kg cauliflower

  • 2 reddish

  • 1.5 tsp chili powder

  • 1 tsp turmeric powder

  • 2.5 tsp mustard powder (small mustard)

  • 4 tsp mustard oil

  • 2.5 tsp salt

    Peel the carrots n reddish and wash them, then cut into long, thin slices.

    Now wash the Cauliflower and cut into small pieces.

  • 03

    Over cotton cloth/newspaper spread all the pieces of vegetables n let them dry for 5 to 6 hours/overnight.

    Once all the vegetable pieces are dried, mix all the spices together.

    Transfer all the vegetables to a jar, sprinkle all the mixed spices and mustard oil, shake the jar so that all the pieces are well coated with spices. ( at this point of time we can taste the pickle and add the spice - whichever is less according to our taste. )

    We have to wait for 15 to 24 hours to get the pickle ready and we can also keep it in the sunlight so that its get ready faster.

    Once it is ready, we can also keep in the refrigerator so that we can use it for a month or two.

    Delicious, Sour carrot pickle is ready to be relished with Chapati or any other stuffed paratha.
