  • All purpose flour 1 cup

  • Granulated sugar 1 cup measured then powdered

  • Baking powder 1 tsp

  • Eggs 2

  • Sprigs all natural bourbon vanilla extract 1 tsp

  • Oil 1/4 cup

  • Orange juice 1/4 cup

  • Edible food colour orange 1 drop

  • For gelly: Orange juice 1 cup

  • Veg Gelatine 1 tsp

  • Hot water 2 tsp

  • Orange colour 1 drop

  • For frosting: Non dairy whipping cream 1/2 cup

  • Icing sugar 2 tbsp

  • Orange essence 1 drop

  • Yellow food colour 1 drop

  • Piping bag 2

  • Star nozzle, shell nozzle 1 each


  • Preheat oven to 180C for 10 minutes.
  • Beat eggs with electric beater until fluffy.
  • Now add powdered sugar, vanilla, oil, food colour, orange juice and again beat for 3 minutes.
  • Sieve all purpose flour and baking powder 2-3 times.
  • Add dry ingredients into wet ingredients.
  • Mix with a rubber spatula in a cut and fold method.
  • Now pour the batter in a greased 8" square pan and bake for 30 minutes or until a toothpick comes out clean.
  • Cool the sponge and cut into two parts.
  • When the cake is baking, make the jelly.
  • Heat 1 cup orange juice in a pan.
  • Add 1 tsp veg gellatin and 2 tsp hot water and mix very well.
  • Now add this mixture to the orange juice and boil until no lump of gelatin remains in the solution.
  • Add 1 drop food colour.
  • Now pour it in a square or rectangular pan and refrezerate to set it completely.
  • Whip the cream with all whipping ingredients until stiff peaks formed.
  • Now place one part of cake on plate.
  • With a piping bag with shell nozzle make designs on the sponge.
  • Now place another sponge of the same size over it.
  • Cut the jelly according to the size of the sponge and place it carefully over the sponge.
  • Make design with small star nozzle over it.
  • Decorate with orange slices.
  • Serve delicious orange cake with orange jelly topping.
