Preheat oven to 180C for 10 minutes.
Beat eggs with electric beater until fluffy.
Now add powdered sugar, vanilla, oil, food colour, orange juice and again beat for 3 minutes.
Sieve all purpose flour and baking powder 2-3 times.
Add dry ingredients into wet ingredients.
Mix with a rubber spatula in a cut and fold method.
Now pour the batter in a greased 8" square pan and bake for 30 minutes or until a toothpick comes out clean.
Cool the sponge and cut into two parts.
When the cake is baking, make the jelly.
Heat 1 cup orange juice in a pan.
Add 1 tsp veg gellatin and 2 tsp hot water and mix very well.
Now add this mixture to the orange juice and boil until no lump of gelatin remains in the solution.
Add 1 drop food colour.
Now pour it in a square or rectangular pan and refrezerate to set it completely.
Whip the cream with all whipping ingredients until stiff peaks formed.
Now place one part of cake on plate.
With a piping bag with shell nozzle make designs on the sponge.
Now place another sponge of the same size over it.
Cut the jelly according to the size of the sponge and place it carefully over the sponge.
Make design with small star nozzle over it.
Decorate with orange slices.
Serve delicious orange cake with orange jelly topping.
