Cardamom Spiced Carrot Lamingtons

  • 1 cup flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp cardamom powder

  • 1/4 cup oil

  • 1/4 cup yogurt

  • 2/3 cup powdered sugar

  • 2 eggs

  • 1 cup shredded carrots

  • 2 cups icing sugar

  • 1/4 cup cocoa powder

  • 2 tsp butter

  • 1/4 cup milk

  • 1 1/2 cup dessicated coconut powder


  • Sieve all the dry ingredients together flour baking soda salt cardamom powder and keep aside
  • In a Mixing bowl add the sugar and eggs and mix well
  • Add in the yoghurt and oil and mix well
  • Fold the dry ingredients into the wet ingredients and mix till no lumps
  • Fold in the shredded carrots and mix well
  • Take a greased and lined square baking tin and pour the mix into it
  • Bake in a preheated oven at 180 degree Celsius for 35 to 40 minutes till a skewer comes out clean
  • Demould the cake when little cool and let it cool completely
  • For the chocolate frosting mix all the ingredients icing sugar cocoa powder butter cardamom powder and milk and mix it in a double boiler till a pouring consistency is achieved
  • For the Assembly of lamingtons cut the cake into 2 inch square pieces and dip each piece in the chocolate frosting and then roll it in the desiccated coconut
  • Put the lamingtons on a wire rack to set an after setting of them at tea time
