Sieve all the dry ingredients together flour baking soda salt cardamom powder and keep aside
In a Mixing bowl add the sugar and eggs and mix well
Add in the yoghurt and oil and mix well
Fold the dry ingredients into the wet ingredients and mix till no lumps
Fold in the shredded carrots and mix well
Take a greased and lined square baking tin and pour the mix into it
Bake in a preheated oven at 180 degree Celsius for 35 to 40 minutes till a skewer comes out clean
Demould the cake when little cool and let it cool completely
For the chocolate frosting mix all the ingredients icing sugar cocoa powder butter cardamom powder and milk and mix it in a double boiler till a pouring consistency is achieved
For the Assembly of lamingtons cut the cake into 2 inch square pieces and dip each piece in the chocolate frosting and then roll it in the desiccated coconut
Put the lamingtons on a wire rack to set an after setting of them at tea time
