White Sugar Cookies With Strawberry Royal Icing

Ingredients

Serves 12

  • For white sugar cookies : 1 cup Sweet Cream Salted Butter (softened)

  • 1 cup Sugar

  • 1 Egg

  • 1 tbsp Vanilla

  • 2 tsp Baking Powder

  • 3 cups Flour

  • For Strawberry royal icing : 1 : Large egg whites

  • 200g : Icing sugar

  • 2 drops : Pink gel colour

  • 1 tsp : Strawberry extract

  • For Decorating : 24 : Apple blossom flowers

  • 24 : green leaves of choice

  • 3 tbsp : Sugar Pearls

    Prepare the White sugar cookies : Add butter and sugar to your stand mixer. Cream the butter and sugar until it is completely mixed. Do not over-mix.

    Add vanilla , one beaten egg and mix until completely incorporated.

    Add Baking Powder to the flour and mix.

  • 04

    Add the flour to butter egg mixture, one cup at a time and mix.

    Do not chill the dough, the cookies will bake better if the dough is at room temperature.

    Roll a handful of the dough out on a prepared surface until it’s about 3/8″ thick and cut out shapes with a cookie cutter.

    Bake at 350 degrees for 6-8 minutes depending on the size of the cookie. Do not over-bake.

    Remove and cool over wire rack.

    Prepare the Royal icing : Add egg whites, icing sugar, strawberry extract to your stand mixer.

    Whisk on low speed until everything is combined.

    Increase the speed to high and whisk for a minute until white glue is formed.

  • 12

    Add the pink gel colour and whisk to incorporate.

  • 13

    Pipe the prepared royal icing over the sugar cookies leaving a tiny edge.

    The icing will gradually spread the cover the entire cookie.

  • 15

    Set them on a wire rack and garnish with apple blossom flowers, leaves and white sugar pearls.
