Traditional fruit cake loaded with fruits and nuts.

Serves : 6
  • 1 cup Self raising flour

  • 2/3 cup sugar

  • 2/3 cup butter

  • 1/2 cup Rum with coconut flavour

  • 1/2 cup cashews

  • 1/2 cup dried fruits

  • 1 teaspoon baking powder

  • 1/2 teaspoon Cinnamon powder

  • 1 teaspoon Sprig Vanilla extract.

  • 2 teaspoon Dark Caramel Syrup


  • Soak nuts and dried fruits in rum for 48 hours.
  • Preheat the oven to 180 degree and line the cake with parchment paper
  • In a bowl add butter and sugar. Beat till they turn light and fluffy
  • Next add eggs and beat till they mix together.
  • sift flour and cinnamon powder into the batter and mix together
  • Add vanilla extract, dark caramel syrup, soaked nuts and fruits and the remaining rum into the batter and mix together.
  • pour into the cake tin and bake for 60 to 65 minutes.
  • Remove and allow it to cool before removing from the cake tin.
