Traditional fruit cake loaded with fruits and nuts.

Ingredients

1 cup Self raising flour
2/3 cup sugar
2/3 cup butter
1/2 cup Rum with coconut flavour
1/2 cup cashews
1/2 cup dried fruits
1 teaspoon baking powder
1/2 teaspoon Cinnamon powder
1 teaspoon Sprig Vanilla extract.
2 teaspoon Dark Caramel Syrup
Directions
Soak nuts and dried fruits in rum for 48 hours.
Preheat the oven to 180 degree and line the cake with parchment paper
In a bowl add butter and sugar. Beat till they turn light and fluffy
Next add eggs and beat till they mix together.
sift flour and cinnamon powder into the batter and mix together
Add vanilla extract, dark caramel syrup, soaked nuts and fruits and the remaining rum into the batter and mix together.
pour into the cake tin and bake for 60 to 65 minutes.
Remove and allow it to cool before removing from the cake tin.
