Ingredients
Serves 10
Fine Semolina or sooji – 1 ½ cup
Flour or Maida – 1/2 cup
Baking powder- 1 tsp
Baking soda - 1 tsp
Castor Sugar – 3/4 cup (Adjust sugar as per sweetness required.)
Thick Curd- 1/2 cup
Olive oil or any odorless oil/butter – 1/2 cup
Milk – 1 ½ cup
Cardamom powder – 1 ½ tsp
Tutti-frutti – 3 tbsp
For Syrup – Honey – 3-4 tbsp
Warm water – 1 tbsp
Garnish – 1/4cup - Cherries, rice krispies round
Directions
Sift flour or Maida twice. Keep aside.
Dry roast Suji or Semolina. Cool completely.
In a large bowl take curd, oil, 1 cup milk, and powdered sugar. Beat with electric beater until fluffy.
Add Maida, cardamom powder. Whisk it again.
Add semolina. Whisk or beat it. Cover and keep aside for 30 minutes. This will help semolina to soak in the liquid mixture.
After 30 minutes add remaining milk. Beat it. If required add more milk until it forms a right pouring consistency.
Preheat oven at 180-Degree-C.
Add baking powder and soda. Beat it for a few seconds. Don’t overbeat.
Grease baking pan with oil and flour. Sprinkle some Tutti-frutti. Pour the mixture in a greased pan. Smooth out and lightly tap the pan.
Sprinkle remaining Tutti-frutti.
Bake in a preheated oven at 180°c for 30-32 minutes or until toothpick comes out clean.
Remove cake and let it cool on wire rack.
In a small bowl mix honey and water. Brush it on cake evenly.
Garnish it with sliced cherries and round rice Krispies. Serve with hot tea.
