Chocolate Fruit Overload Winter Cake

Ingredients

Serves : 5
  • Plain flour 1 & 3/4 cup


  • Cocoa powder 1/4 cup


  • Instant coffee powder 1 teaspoon


  • Baking powder 1 tablespoon


  • Baking soda 1 teaspoon


  • Milk powder 1 cup


  • Brown sugar 1 cup


  • Full fat milk 1 cup


  • Melted butter 1 cup


  • Mixed tutti-fruity 1/4 cup


  • Chopped cashewnuts 2 tablespoons


  • Chopped almonds 2 tablespoons


  • Chopped black raisins 2 tablespoons


  • Golden raisins 2 tablespoons


  • Chopped Candied Pineapple 1 slice


  • Chopped, deseeded, dates 8-10


  • Chopped cherries 5-6


  • Plain flour 1 tablespoon to coat dry fruits


  • Orange juice 1/2 cup


  • Mixed fruit or vanilla essence 1 tablespoon

Directions

  • Soak all chopped fruits and nuts in orange juice for 30 minutes, except for tutti-fruity
  • Strain and coat the above fruits in tablespoon of plain flour.
  • Sift together the dry ingredients, flour, cocoa powder, baking powder and soda, coffee powder and sift twice.
  • In a bowl mix the wet ingredients, milk, butter, fruit essence, sugar and mix everything
  • Add milk powder to this liquid mix and beat well to combine
  • Now add in the flour mixture and fold gently
  • In this add the dry fruits and fold everything again.
  • Pour in an 8 inch round tin or in moulds like I have used here.
  • Bake in a preheated oven @140C for 45-50 minutes
  • Once done cool over a wire rack before serving.
  • Relish this warm and soft winter cake with friends and family at any time of the day
