Irresistible Carrot Cake With Creme Cheese Frosting

Ingredients

Serves : 8
  • 200 gram grated carrot


  • 2 tablespoon refind flour


  • 80 ml condensed milk


  • 100 gram soft butter


  • 1 teaspoon nutmeg powder


  • 1 teaspoon cardamom powder


  • 1 teaspoon baking powder


  • 1 teaspoon baking soda


  • 200 gram all purpose flour


  • 100 ml plain soda ( drinking soda bottle )


  • 1 tablespoon butter for Grease


  • For Frosting : 1


  • 1 cup cup creme cheese


  • 1 cup icing sugar


  • 1 teaspoon butter


  • 1 teaspoon sprig vanilla extract

Directions

  • In a bowl add 200 gram grated carrot along with 2 tablespoon refind flour
  • Mix with your fingers until mixture turns lumpy
  • Now in another bowl add all purpose flour and 1 teaspoon cardamom powder, 1 teaspoon nutmeg powder, 1 teaspoon baking powder and 1 teaspoon baking soda stire it well and keep on the side
  • Now in a separate bowl add 80 ml condensed milk and 100 gram soft butter .
  • Whisk it untill it reaches a smooth consistency
  • Add the dry ingredients in three parts along with 100 ml soda water .. whisk all together make sure there are no lumps.
  • Once you have smooth consistency add the carrots to the mixture and mix them all together
  • Grease your baking tin with butter...pour the mixture into it.
  • Bake the cake in a preheated oven at 180 C for 30-40 minutes or toothpick inserted into the centre comes out clean.
  • Cool in the pan for 10 minutes.
  • For Frosting. . Add creme cheese, icing sugar, 1 teaspoon butter and vanilla extract. Mix it all together
  • Now spread the Frosting over the top . Garnish with carrot.
  • Your delicious irresistible Carrot Cake is ready
