Tea Barmbrack - A traditional Irish Fruit Cake

Ingredients

Serves : 6
  • 2 cups flour


  • 1 cup sugar


  • 1 egg


  • 1tsp baking powder


  • 200 grams mixed dry fruits (walnut , almond , raisins , sultana ,cherry )


  • 1 table spoon whiskey


  • 2 tea bags


  • 1 cinnamon sticks


  • 3 ,4 cloves


  • 1 big cardmom


  • 1/2tsp ginger powder

Directions

  • Take a bowl add 2glass of water immerse tea bags in it now soak dey fruits in this cold tea warer for whole night .
  • Take a grinder , grind togeather cinnamon cloves cardmom and mix in ginger powder.and keep aside.
  • Preheat oven to 180℃
  • In a bowl take the flour , soice powder , baking powder and sift them for 2 times .
  • Beat egg in different bowl.
  • Mix egg in the flour mixture.
  • Add sugar
  • Add soaked dryfruits with out tea water .preserve tea water for later use.
  • Mix all ingredients well.
  • Mix whisky too
  • Now slowly add tea water to the mixture.
  • Check consistency.
  • Pour batter into a greased tin and bake at 180 for 60 minutes.
  • Check with skewer if cooked well.
  • Take it out for cooling .
  • After cooling wrap it with cling film for 10 to 12 hours. So that it soakup all flavours of tea , whisky and dryfuits well.
  • After 12 hours slice up and enjoy your tea cake .
