Soak all chopped nuts and fruits except tutti-fruity mix in orange juice for 30 minutes
Strain the soaked fruits and mix tutti-fruity and coat in a tablespoon of dry plain flour
Sift all dry ingredient, flour, baking powder and soda
In a bowl mix milk, sugar, ghee, mix fruit essence and mix well
Add milk powder and mix
Add flour mixture in portion and fold gently
Add the fruits and nuts to the batter, fold again till well incorporated
Pour in a greased and coated 8 inch baking tin or use a mould if you are going to gift it to someone like me
Bake for 40-45 minutes on 140C
Once done cool on wire rack
Cling wrap and decorate with laces to gift it to loved ones
I had tripled the recipe and made several such cakes for my family and friends. You can see the sponge of the inside of the cake in the attached pic.
