Ingredients

Serves : 5
  • Plain flour 2 cups


  • Milk powder 1 cup


  • castor Sugar 1 cup


  • Milk 1 cup


  • Melted butter or ghee 1 cup


  • Baking soda 1 teaspoon


  • Baking powder 1 tablespoon


  • Tutti fruity mixed 1/4 cup


  • Chopped cashewnuts 2 tablespoon


  • Chopped almonds 2 tablespoons


  • Chopped black raisins 2 tablespoon


  • Chopped and deseeded dates 10


  • Chopped cherries 5-10


  • Vanilla extract or mixed fruit essence 1 tablespoon


  • 1/2 cup orange juice


  • Chopped candied pineapple 1 slice


  • Plain flour extra 1 tablespoon for coating

Directions

  • Soak all chopped nuts and fruits except tutti-fruity mix in orange juice for 30 minutes
  • Strain the soaked fruits and mix tutti-fruity and coat in a tablespoon of dry plain flour
  • Sift all dry ingredient, flour, baking powder and soda
  • In a bowl mix milk, sugar, ghee, mix fruit essence and mix well
  • Add milk powder and mix
  • Add flour mixture in portion and fold gently
  • Add the fruits and nuts to the batter, fold again till well incorporated
  • Pour in a greased and coated 8 inch baking tin or use a mould if you are going to gift it to someone like me
  • Bake for 40-45 minutes on 140C
  • Once done cool on wire rack
  • Cling wrap and decorate with laces to gift it to loved ones
  • I had tripled the recipe and made several such cakes for my family and friends. You can see the sponge of the inside of the cake in the attached pic.
