First of all take all the chopped mixed dry fruits and and Tutty fruity in a mixing bowl and add Rum .
Soak it for 7-10 days , keep it covered inside fridge.
Assemble all the required ingredients
Take eggs in a mixing bowl and assemble needed ingredients
Sift all purpose flour baking powder baking soda 3-4 times
Take sugar in a heavy bottom pan and heat it on low heat until golden and start melting , keep mixing and immediately add some milk or water to it. switch off heat and let the caramel cool completely
By the time take eggs and and Sprig Bourbon vanilla extract in a mixing bowl and beat well until fluffy
Strain Rum soaked dry fruits through a strainer , and keep aside excess Rum
Now add oil and caramel to beaten eggs mixture and with the help of hand blender beat well until fluffy
Now add sifted flour and strained Rum soaked dry fruits to wet mixture, in small amounts
Mix well everything in uniform mixture
By the time preheat oven on 180 degrees and grease a oven proof dish with some oil and dust it with some dry flour
Transfer the ready cake batter to gresed dish , sprinkle some more dry fruits on top
Bake the Rum cake, on 180 degrees for 20 to 25 minutes , let it cool completely inside the oven only
Rum cake is ready after baking
Sprinkle remaining Rum on top of baked cake properly and let it set for approximately one day more
Now garnish as you like and serve delectable Rum Cake
