Jelly Wala Cake

Ingredients

Serves : 6
  • 1 1/4 tsp Baking powder


  • 1 cup Hung curd


  • 3/4 cup 3 tsp sugar


  • 1/2 tsp Baking soda


  • 1 tsp Sprig Vanilla extract


  • 1 1/4 cup maida


  • For Fruit Jelly Layer :


  • 1 cup mixed fruits (I used pineapple, pomegranate, strawberries, kiwi and grapes)


  • 1 tsp agar-agar powder


  • 1/16 tsp mango essence


  • 35 gms castor sugar


  • 210 ml cold water


  • 1/2 cup whipped cream

Directions

  • Take a bowl n sieve the flour and set aside .
  • Now take another bowl, beat the yogurt and sugar together. 
  • To this mixture add the baking soda and baking powder. Beat well making sure there are no lumps and let this mixture rest for 5-8 mins. This mixture will have bubbles all around and turn frothy
  • Now add the vanilla essence and oil. Beat well .
  • Fold in the flour making sure there are no lumps.
  • Pour this batter in a 6-inch square baking dish lined with parchment paper.
  • Bake in a preheated oven at 180℃ for 30 – 40 mins or until an inserted skewer comes out clean .
  • Once it cools down completly cut it into half from the centre.
  • For jelly preparation : Cut all your fruits as required, I do not chop the grapes and pomegranate.
  • In a bowl, combine the cold water and agar-agar and stir well. The mixture should have no lumps. Once mixed, put this in a pan, switch on the gas and stir until all the agar-agar has dissolved. Bring the mixture to a boil for a minute and add the sugar and essence. Stir well and switch off the gas once sugar is dissolved
  • Size of jelly should be same to the size of the cake, so in clean the cake mould n pour a little of the agar-agar mixture in it and assemble the fruits according to choice. Once all the fruits are placed, pour all the agar- agar mixture onto the fruits and let set in the fridge for 5 mins or until slightly firm.
  • Once jelly is completely set, place it over half of the cake (we can also apply some whipped cream over cake's halves)then again place cake over jelly.
  • Delicious jelly cake is ready to be served, serve it chilled.
