Ingredients

Serves : 8
  • 1 3/4 cup flour/maida


  • 3/4 cup butter


  • 3/4 cup sugar powdered


  • 1 1/2 tsp baking powder


  • 3/4 tsp baking soda


  • 3/4 cup milk


  • 6 tblsp Black Currant Crush


  • Beetroot Cream Cheese Frosting:


  • 1/2 packet cream cheese


  • 1/2 half cup butter


  • 2 tsp vanilla


  • 2 1/2 cups icing sugar


  • 6 tblspn beetroot juice


  • For Topping


  • 1 cup fresh fruits


  • 1 tsp powdered sugar

Directions

  • Sieve flour, baking powder and baking soda together and keep aside. 
  • Beat butter and powdered sugar together well till it turn soft and fluffy.
  • Add black Currant Crush and mix well.
  • Add the flour and using cut and fold method mix thoroughly.
  • Bake in a well greased cake pan in pre heated oven at 180 ℃ for 25 minutes or till done. 
  • Cool in pan for 5 minutes and then remove from pan and cool on wire rack till cold. 
  • Beetroot Cream Cheese Frosting : Beat all the ingredients together in a mixer and can be piped but we can also spoon the frosting on and tidy it with a palette knife.
  • Cut n place fresh fruits over cake n sprinkle powdered sugar over them
  • Keep it in fridge for 30 mins before serving.
