Eggless Carrot Cake with Caramel Sauce

  • 11/2 cup all purpose flour

  • 1 cup curd

  • 2 tbsp milk

  • 3/4 cup sugar

  • 1/4 cup grated carrot

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1 tsp sprig vanilla essence

  • For caramel sauce...1/2 cup sugar

  • 1/2 cup cream

  • 1/4 cup butter

  • 1/4 cup chopped almonds and pistachios

  • 1 cup whipped cream


  • Preheat oven at 180°
  • Grease round mould
  • Mix sugar and curd till creamy
  • Add baking soda and baking powder and mix
  • Add vanilla essence and mix
  • Add flour and mix in cut and fold method
  • Add grated carrot and mix
  • Transfer this batter in grease tray and bake for 20 mins or till the toothpick inserted comes out clear
  • Cool on wire rack
  • Meanwhile cake is baking make caramel sauce for this melt half cup sugar in a pan
  • As sugar melts add butter in it and stir continuously
  • As butter melts add cream and stir continuously flame should be low
  • Cook till cream completely incorporate in sugar -batter mixture
  • Turn off the flame and let it cool
  • Cut cake in two slices and apply whipped cream evenly
  • Pour caramel sauce over it and decorate with chopped nuts
