First mix vinegar and vanilla extract in milk and set aside
Add flax seed powder in 3 tbsp water
Now to make crepes mix all dry ingredients in a large bowl
mix Maida,coco powder, powder sugar and baking powder
Assemble wet ingredients
In a blender combine milk ,flax seed mixture
Add dry ingredients gradually in wet ingredients and blend until smooth
Add 1/2 cup of water mix well
Rest the batter for 15 min
Now heat a 9 or 10 inch non-stick pan over medium heat, when hot, lightly spray pan with butter or oil
Pour 1/4 cup of batter in to the pan , swirling the pan slightly to form a thin, even coating on the bottom of the skillet
Cook until the bottom of the crepe sets and is golden in colour 1 to 2 min.
Gently flip with a spatula and cook the another side for 30 sec.
Repeat with remaining batter stacking finished crepes on a plate
From this batter you can make about 30-40 crepes depending on the thickness and diameter
Cool crepes
Assemble the crepe cake
Place the first crepe layer on to your serving plate
Stack crepes on top of each other, with whipped cream between each layer
Once assembled trim edges for a cleaner look
Cover the whole cake with cream
Garnish chocolate shavings
Spread choco chips
Cut into pieces
