High-Tea Dry Fruit Cake

  • Maida 2 cups

  • Baking Powder 1 tsp

  • Baking Soda 1/2 tsp

  • Milk powder 1/2 cup

  • Melted Amul Butter 1/2 cups

  • Powdered Sugar 1 cups

  • Full Fat milk 1 cups

  • chopped cashews or pistachio 1 tbsp

  • colourfull tutti-fruity 2 tbsp

  • green gel or liquid food colour 2 drop

  • Pista essence 1/2 tsp


  • Preheat oven @180C for 10 minutes, until you can prepare the cake batter.
  • Grease and line a baking tray or a loaf pan like I am using here today.
  • Sift together maida, baking powder and soda twice or thrice.
  • In a bowl add the liquid ingredients and beat well. First add melted butter and sugar and mix well.
  • Then add milk powder to the mixture a d beat
  • Now add the essence and food colour and mix well.
  • Mix the batter well. Add water if batter is very thick
  • Pour in prepared pan and level the top with a spatula.
  • Sprinkle chopped nuts and tutti fruity on top.
  • Bake for 40-45 minutes until toothpick inserted in the centre comes out clean.
  • Serve warm with tea at anytime of the day
