preheat the oven for 10 minutes at 170 degree Celsius
in a bowl add olive oil and sugar and mix with beater till sugar dissolves
add yoghurt and vanilla essence, blend properly
in a separate bowl sift together refined flour, wheat flour, baking powder, baking soda, cinnamon powder and nutmeg powder and keep aside
now add half cup of drained Rum in the wet ingredients and mix nicely.
now add the dry ingredients into the wet ingredients in small portions and fold together with the help of spatula.
now add in the drained dry fruits and orange zest and mix .
you can add more rum to adjust the consistency. the consistency of the batter should not be runny.
pour the batter into the greased cake tin.
tap it gently so that the battery is set properly in the cake tin.
bake the cake at 170 degrees for 35 to 40 minutes till the toothpick inserted comes out clean
let it come to the room temperature before de- moulding
Dust the cake with icing sugar and garnish it with fresh strawberries.
if you like you can prick the cake and pour Rum on it. it will make the cake more moist as done traditionally.
