Carrot Muffins With Cream Cheese Frosting

  • 120 grams refined flour

  • 100 grams sugar

  • 100 grams refined oil

  • 4 tablespoons egg

  • 1/2 teaspoon vanilla essence

  • 1/2 teaspoon baking powder

  • 1 cup grated carrots

  • 1/4 teaspoon cinnamon powder

  • 1/2 Cup chopped dry fruits

  • 1/2 teaspoon baking soda

  • for the cream cheese frosting: 100 gms sugar

  • 100 grams cream cheese at room temperature

  • 2 tbsp butter at room temperature

  • 2 drops of green colour

  • 2 drops of red colour

  • 1/4 teaspoon vanilla essence


  • preheat the oven at 180 degrees for 10 minutes
  • whisk together sugar, oil, egg and vanilla essence till sugar is completely dissolved
  • now mix in flour, baking powder, baking soda and cinnamon powder into the liquid gently.
  • now add carrots and dry fruits and fold gently.
  • scoop the batter into Muffin moulds and bake them at 180 degrees for 15 to 18 minutes until toothpick inserted comes out clean.
  • let the muffins cool completely on a wire rack
  • for the cream cheese frosting, whisk together cream cheese and butter till smooth
  • now add sugar in vanilla essence and whisk until creamy and smooth
  • divide the frosting into two parts and colour them green and red by mixing in the colour
  • first Frost the muffins with green icing and then with a drop of red to make them look like carrots
  • garnish with some sprinklers.
