preheat the oven at 180 degrees for 10 minutes
whisk together sugar, oil, egg and vanilla essence till sugar is completely dissolved
now mix in flour, baking powder, baking soda and cinnamon powder into the liquid gently.
now add carrots and dry fruits and fold gently.
scoop the batter into Muffin moulds and bake them at 180 degrees for 15 to 18 minutes until toothpick inserted comes out clean.
let the muffins cool completely on a wire rack
for the cream cheese frosting, whisk together cream cheese and butter till smooth
now add sugar in vanilla essence and whisk until creamy and smooth
divide the frosting into two parts and colour them green and red by mixing in the colour
first Frost the muffins with green icing and then with a drop of red to make them look like carrots
garnish with some sprinklers.
