Ingredients

Serves : 12
  • 3/4 Cup pumpkin puree


  • 1 egg


  • 1/2 cup oil


  • 1/4 teaspoon ground dry ginger


  • 1 teaspoon cinnamon powder


  • 1 teaspoon baking powder


  • 3/4 teaspoon baking soda


  • 1 teaspoon vanilla essence


  • 1/4 Cup water


  • 1 Pinch of salt

Directions

  • preheat oven to 180 degrees for 10 minutes
  • sift together flour, baking powder, baking soda, cinnamon powder and salt and mix well
  • in a separate bowl add oil, sugar and eggs and Beat them well
  • now add in vanilla essence and Beat again
  • now add pumpkin puree and water and mix them well
  • add the dry ingredients into the wet ingredients in small batches and mix them well
  • do not over mix the batter
  • fold in the choco chips using a spatula
  • Scoop the batter into Muffin moulds and Sprinkle some choco chips on top
  • Bake at 180 degrees for 20 to 25 minutes and let it cool before serving.
