Ingredients
Serves 8
4 ounces Butter
1 Egg
1 cup chopped dates Khajur
2 cups Flour
1 cup Sugar
1 teaspoon Baking Soda
2 teaspoon Baking powder
1/2 teaspoon Salt
1 teaspoon vanilla essence
1/2 cup Coconut(dessicated)
1 cup hot Water
For filling:-1 tbsp Butter
1/2 cup Sugar
1/2 cup Coconut powder(dessicated)
/2 cup Khajoor chopped Dates
1/2 cup Water
1 Tbsp Cocoa Powder
some chopped Almonds to decorate, approximately 7-8pc
Directions
Pour hot water over dates and baking soda
Leave aside for sometime
Beat the egg nicely add butter and sugar to it
Stir in date mixture and add Vanilla essence, salt and coconut
Stir in sifted flour and baking powder
Preheat Convection mode at 180 degrees for 10 minutes and when it beeps place the cake tin inside
Set the convection mode for 30 to 40 minutes at same 180 degrees
for filling:- cook sugar, cocoa, butter, dates and water until thick, add coconut to be spread between the two cake layers, decorate top of cake with chocolate icing and put some almonds on top
Cut & Serve at room temperature
My Tip: Put a pinch of cinnamon if you like, roast & make powder of it
