Eggless" "Seedless" "Herb Cake" - "Lemon Mint Cake" A perfect cake to dress up boring old cake and make it fancy anytime you have friends over, it's a healthy,refreshing & super festive herb cake which doesn't require any seeds....!

Serves 8

  • Milk 1 standard size cup/katori

  • Maida 1 standard size cup/katori

  • Brown sugar 1/4th cup

  • Olive oil 3/4th standard size cup/katori

  • Baking soda 1/4th teaspoon

  • Baking powder 1/4th teaspoon

  • Lemon juice (squeeze out 1/2) lemon juice

  • Lemon zest ( zest of 1/2 lemon)

  • Mint leaves (8-10 fresh pudina leaves to put inside plus for decorating)

  • Lemon essence few drops, approximately 1/4th teaspoon

    Take Olive oil

    Add brown sugar to it, blend well

    On the otherside sieve maida,baking powder & baking soda together, keep aside

    Now add milk to the oil sugar mixture, beat in clockwise direction,Add sieved dry mixture & beat again till it is light & fluffy

    Now lastly add lemon juice, lemon zest, fresh mint leaves & lemon essence all together, mix well

    Greece the aluminium cake tin,dust with some maida,Put the cake batter inside,topp it with fresh mint leaves

    Preheat the microwave convection mode at 150degree

    For 10minutes

    When it beeps, open the door and place the Aluminium cake tin inside

    Set temperature for 40 minutes at 150degree

    When it beeps, check it using toothpick, if it comes out clean, it means the cake is ready
