Ingredients
Serves 8
1 cup vegetable oil
pinch salt 1/8th teaspoon
1tsp baking soda
1cup sugar
few drops vanilla essence approximately 1/4th teaspoon
2 cups maida
2 cups shredded zucchini
chopped almonds & kishmish 4-5
Directions
In a large bowl, mix together the oil, sugar, vanilla essence with a beater till well blended.
combine the flour, baking soda, & salt.
stir into the sugar mixture.
fold in the zucchini & dry fruits.
mix well.
put some dryfruit on top also.
pour into the greeced aluminium tin and bake it for 25-30 min in the preheated oven at 180degree( first preheat for 10min and then place the cake tin inside, set the temperature 30min approximately)
Note - 1) greece the aluminium tin with oil and then dust it with maida after that pour the mixture & then keep it for baking. 2) take 2tbsp water plus 2tbsp sugar in a pan, heat on sim flame till sugar gets caramelized, then immediately put some kishmish, so that it turns into dark brown, take out and keep aside, we have to use this caramelized kishmish on top of cake for decorating while baking. 3) inside we can put direct almonds & kishmish but on top we will use caramelized kishmish.
