Spinach Egg Muffins

  • 4 eggs

  • 1 onion

  • 1 tomato

  • 1 cup of spinach leaves

  • 1 tsp pepper

  • Half of 1 tsp salt

  • 2 tsp garlic granules

  • 2 tsp oil


  • preheat the oven at 180 degree Celsius
  • grease the Muffin tray with oil
  • heat of the oil in the pan add chopped onions Saute until translucent
  • add chopped tomato and cook until mushy
  • add washed spinach leaves and Saute until it shrinks and switch off the flame
  • take a mixing bowl ,break eggs and add to the bowl
  • now add all the Saute mixture into the eggs and whisk well until combined
  • ladle the egg mixture into the greased tray and bake for 15 to 20 minutes until the top becomes little firm
  • allow it cool completely and remove from baking tray
  • serve it with source of your choice
