Serves : 8
  • 4½ ounce caster sugar(superfine)

  • 4 eggs

  • 3 tbsp icing sugar for dusting

  • 2 tbsp warm water

  • 1 tsp Vanilla extract

  • 4½ ounce all purpose flour

  • 1 tsp baking powder

  • For filling- 8 ounce whipped heavy cream

  • 2 tbsp chopped fruits as per your choice(apricots, grapes etc)

  • For decoration - 1 tbsp mint leaves

  • 8-10 cherries


  • Preheat the oven to 375 degrees F.
  • Brush the baking tray's base and sides with melted butter
  • Dust it with flour
  • Whisk the eggs and sugar with electric blender until it becomes fluffy
  • then add water and Vanilla extract
  • sift the flour baking powder about a third at a time fold it into the eggs mixture
  • pour the mixture gently in the baking tray
  • bake about 12 to 15 minutes
  • spread a piece of parchment paper , larger than the trat and Sprinkle icing sugar on it
  • Turn on or invert the tray on the parchment paper
  • Place a slightly damp kitchen towel over the cake while it cools this will prevent it from drying
  • When the cake is cool spread the whipped cream leaving 1 inch border
  • Now in the centre spread chopped fruits
  • With the longer side facing you roll up the swiss away from you
  • Transfer to plate and cut it properly with equal distance
  • Decorate it with cherry ,cream and mint leaves
