Eggless Banana Dry Fruit Cake

Ingredients

Serves : 8
  • 1 1/2 cup atta(wheat flour)


  • 1 teaspoon baking powder


  • 1 teaspoon baking soda


  • 2 ripe mashed bananas(can mash with vegetable masher)


  • 2 tablespoon black raisins


  • 2 tablespoon golden raisins


  • 2 tablespoon chopped almonds


  • 2 tablespoon chopped cashew


  • 1/2 cup milk(room temperature)


  • 1/2 cup refined oil


  • 1/2 cup sugar(powder)


  • 1 teaspoon Sprig Vanilla Extract

Directions

  • Mash the bananas well.
  • Sieve together the wheat flour, baking powder and baking soda together twice so that all mixes well.
  • Add all the dry fruits in the flour mixture so that they are properly dusted and do not settle at the bottom of the pan.
  • Preheat the oven at 170 degrees for 15 minutes.
  • Now slowly add the maida mixture n mix well..
  • Add in 4 to 5 portions so that they mix well.
  • Transfer the batter into a greased tin of 8 inches round tin or of any other shape.
  • Bake this cake on 170 deg for 25-30 minutes or chk by inserting a tooth pik If It comes out clean our cake is ready.
  • Do not over do the cake or it will get dry by loosing its moisture.
  • Once done leave in tin for 15 minutes and then remould it.
  • I have dusted a little of powder sugar on it.
  • I usually add the Sprig Vanilla Extract along with the milk so that it incorporates well. Can add at the end too before putting it to bake.
