Ingredients

Serves 4

  • 1 1/2 lbs haddock or halibut, 1/2 inch thick

  • 3/4 cup cornflake crumbs

  • 1/4 cup finely grated parm cheese

  • 1 tsp old bay seasoning

  • 3/4 tsp dried thyme

  • 1/2 tsp paprika

  • 1/4 tsp garlic powder

  • 2 eggs, lightly beaten

  • 1/2 c whole wheat flour

Directions

    Preheat oven to 450. Spray baking sheet with oil.

    Pat fish dry with paper towel, cut into 1x3 inch strips. Combine crumbs, parm, seasoning in bowl 1. Add eggs to bowl 2, and flour to bowl 3. Dunk flour, eggs, mix

    Spray tios lightly with cooking spray, baked 10-12 mins until golden brown
