Chop onions and tomatoes finely.
Add oil to a pan and heat it.
Add mustard and allow them to splutter then add red chillies and curry leaves.Fry about a minute.
Then add onions and fry till transparent .
while the onions fry..cut the brinjals and keep them in a bowl of water.
When onions turn golden add ginger garlic paste and fry for a minute.
Now add brinjal ,salt and fry at a medium flame for 2 minutes.
When the brinjals are soften add tomatoes and cover the lid... After a minute add all spices and mix.
Fry for sometime..and then serve hot with rice or roti.
