"Eggless" "Seedless" "Essenceless" "BAKED AAMPAPAD MUFFINS" A concept of no-artificial flavours, I wanted to share with you an incredibly delicious stroke of pure genius and innovation. It's an Indian fruit leather made out of mango pulp mixed with concentrated sugar solution and sun dried, this cake dosent require any extra flavours like essence drops or nuts or cardamom or even extra sugar also because Aampapad itself is made with concentrated sugar, so no extra items needed. Ingredients

Serves 6

  • Aampapad - 1 small pack( grated half to put inside and other half for topping)

  • Milk 3/4th small katori or standard size cup

  • Maida 1 small katori or standard size cup

  • Brown sugar 1/4th katori or 1/4th cup

  • Olive oil 1/2 small katori or standard size cup

  • Baking soda 1/4th teaspoon

  • Baking powder 1/4th teaspoon

    Take Olive Oil

    Add Brown Sugar to it and blend well

    On the otherside sieve maida,baking powder & baking soda together, keep aside

    Grate Aampapad and keep aside

    Now add milk to the oil sugar mixture, beat in clockwise direction , Add sieved dry mixture & beat again till it is light & fluffy , at the same time add grated Aampapad and mix well

    Put in greesed silicon muffin moulds, top it with grated Aampapad pieces , Preheat the microwave convection mode at 150degree

    For 10 minutes

    When it beeps, open the door and place the baking tray of silicon cake moulds inside , Set temperature for 40 minutes at 150degree

    Baked Aampapad muffins are ready to serve
