Ingredients

Serves : 6
  • 11/4 cup 2 tbsp all purpose flour


  • 2 tbsp corn flour


  • 1/4 teaspoon salt


  • 1 teaspoon baking powder


  • 1 teaspoon Vanilla extract


  • 3 eggs


  • 160 grams caster sugar


  • 160 grams soft unsalted butter


  • 2 tbsp milk


  • 1/4 Cup powdered sugar for dusting


  • 6 tbsp berry jam


  • 180 ml cream

Directions

  • preheat oven to 180 and prepare cake tin
  • Sieve flours, baking powder and salt in a bowl and keep it aside
  • Blend sugar and butter in a bowl until creamy
  • Add eggs 1 at a time and beat until pale and frothy
  • Add vanilla extract and blend well
  • Add milk and blend well
  • Slowly add dry ingredients. Cut and fold gently until just combined
  • Pour batter into big cake pan or 2 small pans. Level evenly.
  • Bake for 20-25 minutes until done
  • Allow to cool for 30 minutes. Demould
  • If prepared 1 big cake, then slice into 2 parts
  • Whip cream to form stiff peaks
  • On serving dish, place 1 cake or sliced cake
  • Spread jam evenly on top
  • Spread cream on top of jam
  • Now place second cake or second sliced cake on top
  • Dust with powdered sugar. Slice and serve
